Every busy college student loves white cheddar popcorn. And in between classes I saw a lot of my peers making this a replacement meal on the go. We all know this isn’t the healthiest decision but we do it out of convenience. And hey, the bag says “Smart Food” right on the front of it. But deep down we all know that this isn’t a substitute for a nutritious meal.
We let our health take a back seat on a promise we make ourselves that when we have enough money and security we’ll start making healthy decisions. But lets face it, most of us will never feel like we have quite “enough” money to spend on the high priced items at health food specialty stores. The purpose of this blog is to show that it’s possible to eat healthy on a budget.
A little about myself: My name is Madison Girifalco and I have been vegetarian for about 12 years and vegan for 7. I grew up in Wilmington Delaware (not exactly the vegan Mecca) and then went to get my undergrad in Chicago (which sort of was the vegan Mecca).
After graduation I headed straight for Barcelona. I spent the next 5 months traveling, “living the dream”, enjoying Barcelona, and doing so with only a couple thousand dollars of spending money for the entire trip. Between, this time in DE, Chicago and abroad I have learned a lot about eating well on a budget.
